Not only do I love to crochet, but I also enjoy trying out new tasty dishes. This is a great recipe I picked up at our family reunion. It is so delicious and good for you too! This Black Bean and Corn Salsa is an excellent source of folic acid and fiber. It’s excellent as a side dish or snack. You can even make this into a meal by wrapping it up in a tortilla or flat bread and topping it with sour cream. This salad is also delicious on grilled chicken or fish.

Black Bean and Corn Salsa

Salmon with Black Bean and Corn Salsa, yum!

Serving Size : 8
Qty Ingredients
1 15 ½ oz Canned Black Beans - rinsed and drained
2 Cups Frozen Corn - rinsed with hot water or 1-15 ½ oz canned corn
½ Cup Chopped or Dried Red Onion
1 Red Bell Pepper - diced

Dressing
4-6 Tbs Olive Oil
1 tsp Cumin - ground
¼ Cup Cilantro - fresh chopped
Salt and Pepper - to taste
4-6 Tbs Lime Juice

Mix first 4 ingredients in large bowl. Mix Dressing ingredients in small bowl and pour over ingredients in large bowl - mix well. Serve with Nachos or over fish or grilled chicken.

Tonight you’ll be busy counting down the hours until the New Year. Hopefully, you’re spending time with your family and friends. With all the excitement, who has time to make dinner? You want something quick and easy to make. Not only that but it needs to be tasty! I have acquired a delicious recipe from one of our local restaurants that you and your family will be sure to love. Serve it over shredded lettuce with sour cream, salsa and guacamole dip on the side. It’s great for lunch or dinner.

Quesadillas

Tasty Quesadillas!

Recipe By : Maggie
Serving Size : 6
Ingredients:
1/2 Cup Tomatoes (chopped fine)
1/4 Cup Onions (chopped fine)
1/4 Cup Green Pepper (chopped fine)
1/2 Cup Chicken (chopped fine)
2 Cups Shredded Colby or Cheddar Cheese (8 ounces)
1/4 Cup Salsa
3 Tb Butter or Margarine
12 Flour Tortillas (6 inch)

Preheat large skillet (300 degrees or Med High). Mix all ingredients except tortillas and butter. Butter one side of each tortilla. Place 6 tortillas buttered side down on skillet. Put 1/2 cup of cheese mixture on each tortilla. Place another tortilla on top of each with buttered side facing up. Cook on both sides until tortilla is lightly brown and cheese is melted. Cool slightly and cut into wedges.

Try Other Ingredients: chopped fresh cilantro or parsley, hot chili peppers, spinach, mushrooms.

Holiday Schedule

I hope all of you had a happy holiday. Just when you thought the hustle and bustle was over, the New Year is almost upon us. I’m looking forward to a whole new year of fun and excitement. Our new patterns will be going up within the next couple of weeks and I know all of you are excited about that. I’ve had several of you asking about the Giraffe pattern. Don’t worry, it will be available soon!

I have a quick note about our holiday schedule for the New Year. The office will be closed December 31st and January 1st for the holiday. We will re-open on Friday January 2nd. Any phone calls, emails or orders received over the holiday will be taken care of when we return on Friday.

An early Merry Christmas!

The office will be closed December 24th through December 26th. We will reopen at 9am on Monday December 29th. Any orders placed during this time will not be mailed out until Monday or Tuesday. Christmas Shopping Deadline

There is an amazing emmy-nominated show on PBS called Knit and Crochet Today. The show is in it’s second season with a new host and is sponsored by Coats and Clark. It’s a 30 minute celebration of all that’s fabulous about crochet and knitting. You’ll learn new techniques and see demonstrations by crocheters and knitters of beautiful designs.

You’ll definitely want to watch this for plenty of knowledgeable instruction and inspiration. There are new episodes being aired right now so be sure to look for it. It is not available on every PBS station so be sure to ask for it! Here in North Carolina the show is only available in Raleigh/Durham, Salisbury, Charlotte and Wilmington.
